Today is Blake's actual 6th birthday.
So to celebrate, we had cupcakes and the best Loaded Baked Potato soup ever (recipie is below)
Happy birthday son!!
Loaded Baked Potato soup:
8 oz bacon, chopped
3 lbs russet potatoes, scrubbed
1 lg onion, minced
2 garlic cloves, minced
2 tb flour
4 cups chicken broth
1 cup heavy cream
1 sprig thyme
4 cups shredded cheese
1 cup sour cream
3 green onions
Cook bacon in Dutch oven until crisp. Drain on paper towel. Remove wide strips of peel from potato, and fry in reserved bacon fat untill crisp. Drain with bacon. Add onion to remaining fat in pan, and cook until golden, 8 min. Stir in garlic and flour, cook 1 min more. Wisk in broth and cream, stir in thyme and potatoes (cut into cubes) and bring to a boil. Cook untill potatoes are soft, about 10 min. Discard thyme, and remove 2 cups of potato mixture. Puree remaining soup in batches in blender until smooth. Pour back into pan along with reserved 2 cups. Add cheese, peelings, bacon, and sour cream and warm over low heat. DO NOT let the soup boil or sour cream will seperate! Enjoy, garnish with more cheese and chopped green onions.
